These apple streusel rounds taste like a bakery treat: soft yeast dough, fresh apples, buttery crumble and a delicate powdered finish. For a more mindful version, classic wheat flour is replaced with Locawo High Protein & Low Carb all-purpose flour, the dough and crumble are sweetened with Locawo Sugarwonder, and the cooled pastries are finished with Powder Sugarwonder.

The recipe is easy, shareable and perfect when you want a fresh summer bake with a smart product swap.

Ingredients

Dough & crumble
330 g Locawo High Protein & Low Carb All-Purpose Flour 1 kg
75 g Locawo Locawo Sugarwonder
150 ml milk, lukewarm
95 g butter, divided: 40 g soft for the dough and 55 g cold for the crumble
1 piece egg, medium
7 g dry yeast
2 g salt
5 g vanilla extract
Apple topping
300 g fresh apples, finely diced
15 ml lemon juice
2 g cinnamon
Finish
15 g Locawo Powder Sugarwonder

Preparation

Activate the yeast

Stir the lukewarm milk with the dry yeast and about 1 tsp from the measured amount of Locawo Sugarwonder. Let it stand for 5 minutes until slightly foamy.

Knead the dough

Add 250 g of the Locawo all-purpose flour, 40 g Locawo Sugarwonder, the egg, 40 g soft butter, salt and vanilla extract to the yeast milk. Knead for 5 to 7 minutes until the dough is smooth and elastic. If it feels sticky, let it rest for 5 minutes and then continue kneading.

Let the dough rise

Cover the dough and let it rest in a warm place for about 45 minutes, until visibly risen. It does not need to exactly double, but it should feel soft and elastic.

Prepare apples and crumble

Mix the diced apples with the lemon juice. For the crumble, rub together the remaining 80 g Locawo all-purpose flour, 35 g Locawo Sugarwonder, cinnamon and 55 g cold butter with your fingertips until crumbly.

Shape the apple rounds

Divide the dough into 8 portions, shape into rounds and flatten them on a baking tray lined with parchment paper. Spread the apple pieces on top and press them in lightly. Add the crumble, then cover and let the rounds rest for another 15 minutes.

Bake

Preheat the oven to 180 °C conventional heat. Bake the apple rounds for 20 to 22 minutes, until the edges are lightly golden and the crumble looks crisp. Let them cool completely or until just warm.

Finish with Powder Sugarwonder

Dust the cooled or slightly warm apple rounds with Powder Sugarwonder. They are best served fresh; if you have leftovers, briefly warm them in the oven to make the crumble taste freshly baked again.
