Ingredients

Dough
220 g Locawo High Protein & Low Carb All-Purpose Flour 1 kg
100 g blanched ground almonds
90 g Locawo Powder Sugarwonder
2 g cinnamon
1 pinch salt
2 g baking powder
2 g organic lemon zest
160 g cold butter, diced
1 pc. egg, medium
5 g vanilla extract
Filling
120 g sugar-free raspberry fruit spread

Preparation

Mix the dry ingredients

Combine the Locawo all-purpose flour, ground almonds, 80 g Powder Sugarwonder, cinnamon, salt, baking powder and lemon zest in a bowl. Add the cold butter cubes and rub in quickly with your fingertips or use a dough hook until fine crumbs form.

Make and chill the shortcrust dough

Add the egg and vanilla extract and knead only until a smooth dough comes together. Flatten the dough, wrap it airtight and chill for 60 minutes. This makes it easier to roll out and cut later.

Roll out and cut

Preheat the oven to 170 °C top and bottom heat. Roll out the chilled dough between two sheets of baking paper to about 3 to 4 mm thick. Cut out an equal number of bases and tops; cut small stars, hearts or circles from the tops.

Bake and cool

Place the cookies on a baking tray lined with baking paper and bake for 10 to 12 minutes, until the edges take on a little color. Let them cool completely so the tender shortcrust becomes stable.

Fill and dust

Stir the raspberry fruit spread until smooth and warm it briefly if needed. Spread a thin layer onto the bases, place the tops on them and dust the Linzer cookies with the remaining 10 g Powder Sugarwonder.
