A fresh low-carb cake for the afternoon

This lemon loaf combines bright citrus flavor, a soft crumb and everyday ingredients. Locawo High Protein & Low Carb All-Purpose Flour replaces classic wheat flour, while Locawo Sugarwonder replaces table sugar.

Made for active people, families and anyone who wants a sweet slice with a more mindful ingredient list.

Ingredients

Batter
180 g Locawo High Protein & Low Carb All-Purpose Flour 1 kg
130 g Locawo Locawo Sugarwonder
140 g soft butter
4 pcs eggs, size M
120 g low-fat quark
60 ml freshly squeezed lemon juice
4 g organic lemon zest
50 ml sparkling water
10 g baking powder
1 g salt

Preparation

Prepare

Preheat the oven to 175 °C top/bottom heat. Line a loaf tin with baking paper or grease it well.

Cream butter and sweetener

Beat the soft butter with Locawo Sugarwonder for 2 to 3 minutes until the mixture looks lighter and creamier.

Add the eggs

Add the eggs one at a time, mixing each one in well. Stir in the low-fat quark, lemon juice and lemon zest.

Finish the batter

Mix the Locawo all-purpose flour, baking powder and salt. Briefly stir the dry ingredients into the wet ingredients. Finally, fold in the sparkling water until you have a creamy, rather thick batter.

Bake

Pour the batter into the tin, smooth the top and bake for about 45 minutes. Check with a wooden skewer: only a few moist crumbs should stick to it.

Cool

Let the cake rest in the tin for 10 minutes, then lift it out and cool it on a wire rack for at least another 10 minutes. Slice only once the crumb has set.
